The Alchemy 2021 ‘The Elixir’ was created from a blend of Merlot and Cabernet Franc sourced from the original Alchemy vineyard in the Dartmoor Valley. The varietals were co-fermented in an open fermenter with gentle hand plunging for extraction. After four weeks of post fermentation maceration on skins, the wine was pressed off, racked and then aged in fine French oak barrels for 12 months, 20% of which were new.
Inviting aromas of sweet-scented spice, dark plum and crushed forest fruits fill the bouquet, layered with brooding savoury notes of leather and dried herbs. Rich and concentrated berry fruit and spice fill the palate, supported by fine-grained oak that adds richness and complexity, balanced with juicy acidity, giving a long and flavoursome finish.
